Sloe

Prunus spinosa - Sloe

The sloe (Prunus spinosa) is a small bluish fruit that ripens in autumn and becomes sweeter after the first frosts. Freezing breaks down the tannins in the fruit, removing the bitterness and giving a milder flavour. Frozen sloes are used for liqueurs, marmalades, compotes and teas thanks to their richness in vitamin C and antioxidants. They are also popular in folk medicine to boost immunity and improve digestion. These fruits symbolise autumn-winter nature and are part of traditional Bulgarian cuisine.
